We’re super stoked to share our exciting new collab' with the legends over at 21st Amendment Brewery who came to visit us from San Fransisco. Together, we’ve brewed up two amazing beers: Castles in the Sky and Rodeo Flip.
Back in July, Shaun O’Sullivan, the brewmaster and co-founder of 21st Amendment, popped over to join our head brewer, Rob Orton, for a few days of brewing magic. Shaun and Eddie, our founder, go way back to the early days of craft brewing in the States, and this project is a nod to those roots with a bit of Cornish flair thrown in. Shaun’s son, Ryan, even decided to stick around for the summer, joining us for a six-week internship and getting a taste of the UK brewing scene.
Shaun joined us whilst we were brewing Castles in the Sky, the Rhubarb Wheat Beer, but inevitably, when you get two brewers together (and sipping) in the taproom, before you know it, we had created Rodeo Flip — a big bold, West Coast IPA was born. Taking inspiration from the IPA's that Shaun loves to brew. Rodeo Flip weighs in at 6.8% and is full of bold, punchy American Hops.
We decided to double dry-hop the brew. The first hop addition—Simcoe, Idaho 7, and Mosaic—went in towards the end of fermentation, and the second went in once fermentation was fully complete. Here’s what you can expect from these hops:
- Idaho 7: A late-maturing aroma hop that’s all about juicy tropical and stone fruits, with a sticky pine and marmalade finish.
- Simcoe: Known for its high alpha percentage and low cohumulone, this hop delivers a fruity yet earthy, herbal, and piney aroma, rounding out the palate nicely.
- Mosaic: This hop’s got it all, from berry to citrus to big stone fruit flavours — a true flavour explosion.
Kernowfornia Specials
Castles in the Sky is a refreshing wheat beer with a twist—think soft fruit aromas from Talus hops, a subtle pink hue from hibiscus, and a tangy kick of real rhubarb. Perfect for those laid-back summer days when all you need is a cool drink in hand.
For those who like their beer with a bit more punch, Rodeo Flip is your go-to. This big, bold West Coast IPA is packed with resinous, hoppy goodness. We dip-hopped it with El Dorado for that juicy watermelon and tropical fruit vibe, and then double dry-hopped it with Idaho 7, Simcoe, and Mosaic for a dank, jammy, stone fruit explosion that’s sure to hit the spot.
